Royal Oyster Co. is a South Bay Tide to Table oyster company. We deliver fresh oysters from California's oldest oyster farm — curated from a single source, with an emphasis on the merroir of the pristine waters of Tomales Bay Estuary.

Just like wine grapes, oysters have different tastes based on where they're grown — they merroir the environment. In the drought season, oysters are more briny. In the rainy season, they're sweet. In fall and winter, firm and chewy. In summer, creamy in texture. Our oysters are grown in two distinctive estuaries of the cold Pacific currents — Preston Point and Tomasini Point in Tomales Bay.

Yes! Royal Oyster Co. delivers fresh, live oysters throughout the South Bay — including San Jose, Cupertino, Sunnyvale, Santa Clara, Campbell, Los Gatos, Mountain View, Milpitas, and surrounding areas. We use our own refrigerated van for same-day delivery, so your oysters arrive cold and alive. No third-party shipping.

All our oysters are sourced from a single farm on Tomales Bay — California's oldest oyster farm, operating since the 1800s. The cold, pristine estuary waters where the Pacific Ocean meets freshwater create a unique merroir — the oyster equivalent of terroir in wine — giving our oysters their clean, briny, unmistakably Californian flavor.

Merroir is to oysters what terroir is to wine — it's the unique flavor that comes from the water where the oyster is raised. Tomales Bay's mix of cold Pacific saltwater and fresh mountain runoff gives our oysters a distinctive clean brininess with a sweet, mineral finish. Same species, different bay — completely different taste. That's merroir.

Kumamoto — small, deeply cupped, buttery and sweet with a delicate melon finish. Perfect for first-time oyster tasters. Golden Nugget — medium-sized, clean and briny with a sweet cucumber finish. Caballo Blanco — our largest variety, bold and mineral-forward with a long creamy saline finish. Pairs beautifully with champagne or Sauvignon Blanc. All three are raised in Tomales Bay.

Every order is cold-packed on ice in our insulated branded boxes and delivered same-day by our own team across the South Bay. Oysters arrive alive and at safe temperature (36–40°F). We guarantee live arrival — if any oyster arrives open and doesn't close when tapped, we'll replace it.

In the fridge (37–45°F): Place oysters cup-side down in a bowl, cover with a damp cloth or towel. They'll stay alive up to 5 days. On ice: Place in a perforated container so melted ice drains out — good for 3–4 days. Oysters submerged in fresh water will die, so drain regularly. Never store in an airtight container.

We bring everything — fresh oysters, ice, display setup, and professional on-site shucking. Call us at (408) 685-6995 to plan your event.

Hold the oyster flat-side up wrapped in a towel, insert a shucking knife near the hinge at the pointed end, twist firmly to pop it open, then slide the blade along the top shell to release the meat. Tip: keep it level so you don't lose the liquor (the salty brine inside — that's the best part). We include a shucking guide with every order.

Our top picks: Champagne or sparkling wine — the classic pairing. Sauvignon Blanc — crisp and citrusy, especially with Caballo Blanco. Dry Riesling — subtle sweetness balances the salt. Muscadet — a French favorite with oysters, mineral and light. For beer lovers: a cold lager, pilsner, or wheat beer works beautifully.
